We all know how challenging it is to try to fit in lots of vegetables into our day. I get asked about this almost everyday by my clients, colleagues and even family. I have had the same struggle myself. Over the years I have tried lots of different tricks. One of them lead me to create this green smoothie I am sharing with you today. It is a good balance of lots of vegetables, some fruit and healthy fats (optional).
1 cup cold water
2 cups spinach
1 cup kale
2 stalks celery
Juice of 1/4 lemon
1/2 cup fresh coriander (optional)
1/2 cup fresh parsley (optional)
Blend all the vegetables and water, blend till smooth.
Add all fruits and lemon juice, blend till smooth.
Enjoy for mid-morning or mid-afternoon snack or sip throughout the day.
You can add avocado or chia seeds to this recipe for adding in some good fats.
Play with different greens and fruits for variety.
